This distillery on the Orkney Islands was built in 1798 by tax collector Robert Pringle and the police officer John Robertson, who ironically was responsible for the arrest of Magnus Eunson, the local preacher who smuggled whisky at night. The Orcadians are very proud of their rich cultural history, dialect and traditions, but also their whisky. The production process has hardly changed over the past 200 years. Highland Park is one of the few remaining distilleries that has it’s own floor maltings. They use a combination of peat and heather for kilning (20 ppm), creating a unique flavour. The whisky matures on American oak. Highland Park closed during WWII and the mash tun was used as a huge bathtub for the 60.000 British soldiers on the island. Michael Jackson once called Highland Park the best allrounder malt whisky in the world.
